Can’t spend every night cooking up a storm… but at least I can make raiding the fridge fit a theme.
Remember those eggplants?
Well, there wasn’t quite enough oomph in those coals to give me the full “burnt eggplant” state for real baba ganouj. They were smoky flavored, but just not cooked and drained as far as I needed. So they got split and microwaved for 9 minutes in a plastic colander (no metal in the science oven) over a bowl, then scraped from the skins, mashed with 4 cloves of garlic, juice of a lemon, salt to taste, blob of Greek yogurt, chopped cilantro, a little olive oil.
The rest of dinner is all scrounged: olives, feta from the fridge, grape tomatoes from the counter, pita chips from the cabinet over the freezer, leftover chicken shawarma from the freezer.
Sounds like a balanced meal to me… maybe tomorrow something more elaborate, or perhaps laziness and a pizza delivery.
